The Vintage
The growing season was characterized by a relatively warm winter and rainfall levels above the long-term average. These conditions led to early budbreak in the vineyards. Harvest began early, with yields approximately 15% below the long-term average. Physiological and phenolic ripening varied from one vineyard plot to another, requiring close and individualized monitoring. Most plots were harvested earlier than in previous years in order to preserve freshness and primary fruit flavours in the wine. The harvest concluded earlier than usual.
Wine Characteristics
This dry red wine was produced from Cabernet Sauvignon grapes grown in selected vineyards in the Jerusalem Hills. Following an extended fermentation on the skins, the wine was aged using a combination of stainless-steel tanks and oak barrels.
The wine displays aromas of red and black berries with subtle notes of vanilla. It is medium to full-bodied, with a long and balanced finish.
Food Pairing
The wine pairs well with roasted lamb chops, roast beef and aged Cheddar cheese.
